The iconic Hotel del Coronado is looking for a Food and Beverage Manager to join the leadership team! The quintessential al fresco dining experience with spectacular ocean views, Veranda is a journey of familiarity rediscovered. The menu of exceptionally prepared American favorites is inspired by The Del’s Southern California roots, elevating clean, fresh flavors and regional produce, while classic cocktails and a California-forward wine list provide the finishing touch.

Located on Coronado Island just minutes from Downtown San Diego, this 28-acre property was built in 1888 and has over 750 rooms (to include cottages and villas), 65,000 square feet of banquet space, and 10 food and beverage outlets. This includes 4 restaurants, 2 bars, food truck, marketplace, ice cream shop, and in-room dining.

In this role, you will be overseeing the day-to-day operations of the new Veranda, reporting to the Restaurant General Manager, directly overseeing 1 Food and Beverage Manager and 55 Front of House Team Members.

The ideal candidate must be an exceptional leader with a passion for creating extraordinary experiences, a talent for training and developing others, and experienced in all aspects of restaurant operations (ex. financial performance, social media reputation, local market capture, and employee relations). At least 3 years of restaurant management experience in an upscale dining environment is required. Strong beverage knowledge and managing a unionized work environment is preferred.

Classification: Full-Time

Shift: Various – must be available weekdays, weekends, and holidays.

Pay Rate: The annual salary range for this role is $70,000 - $75,000 and is based on applicable and specialized experience and location.

What will I be doing?

As a Food and Beverage Manager, you will be responsible for directing and organizing the activities of the Food & Beverage departments to maintain the high standards of food and beverage quality, service and marketing to maximize profits through outstanding customer service. Specifically, this includes but is not limited to:

  • Plan and direct all functions of the Food & Beverage department to meet the daily needs of the operation.
  • Prepare, assign and delegate responsibility and authority for the operation of the various food and beverage subdepartments.
  • Develop, implement, and monitor schedules for the operation of all food & beverage outlets to achieve a profitable result.
  • Participate in the creation and marketing of menu designs to attract a predetermined customer market.
  • Implement effective controls of food, beverage and labor costs among all subdepartments and monitor the food and beverage budget to ensure efficient operation and that expenditures stay within budget limitations, including achieving budgeted revenue and labor expenses.
  • Regularly review, evaluate, and respond to customer satisfaction and/or dissatisfaction of the individual outlets; recommend new operating and marketing policies whenever a change in demand, customer dissatisfaction, or a change in competitive environment requires such changes.
  • Ensure compliance with all Hilton Hotels policies and procedures that relate to food and beverage, as well as local, state, and federal laws and regulations
  • Hire, train, supervise, develop, discipline, counsel, and evaluate line employees according to HHC policies and procedures.
