Hilton Pastry Sous Chef - Hotel Del Coronado, Curio Collection by Hilton in Coronado, California

The iconic Hotel del Coronado is looking for a Pastry Sous Chef to join the Culinary team! Joinone of the last surviving wooden Victorian beach resorts in the world and after a$400M renovation (https://www.costar.com/article/749120602/blackstone-completes-400-million-expansion-at-iconic-san-diego-hotel)and expansion, the resort is more stunning than ever.

Located on Coronado Island just minutes from Downtown San Diego, this 28-acre property was built in 1888 and has over 750 rooms ( to include cottages and villas ), 65,000 square feet of banquet space, and 10 food and beverage outlets. This includes 4 restaurants, 2 bars, food truck, marketplace, ice cream shop, and in-room dining.

In this role, you will report directly to the Executive Pastry Chef and assist in overseeing a department of 12 full time team members.

The ideal candidate will have at least 5 years of professional pastry/ baking experience with 2 years in supervisory role. Hotel experience as well as familiarity with chocolate and sugar work is preferred.

What will I be doing?

Specifically, you would be responsible for performing the following tasks to the highest standards:

  • Assist in the preparation and production of a wide range of top-quality pastries, buffet desserts, plated desserts, and baked goods.
  • Ensure all products are consistent in quality, taste, and presentation.
  • Monitor and maintain high standards of hygiene and safety in the pastry kitchen.
  • Collaborate with the Head Pastry Chef to develop new recipes and menus.
  • Innovate and experiment with new flavors, ingredients, and techniques.
  • Supervise and train pastry staff, ensuring they are well-versed in pastry techniques and kitchen protocols.
  • Delegate tasks and oversee the work of pastry cooks.
  • Provide feedback and guidance to improve performance and skills.

Salary Range: The annual salary range for this role is between $75-$90,000 and is based on applicable and specialized experience and location.
