Hyatt Executive Chef in NASHVILLE, Tennessee
Description:
The Executive Chef is responsible for directing and over-seeing the entire food service operations, throughout theproperty. The Executive Chef will promote and facilitate an interactive leadership role for the established culinarydepartments. The Executive Chef will focus on supervising and supporting the day to day activities in all kitchens bydelegatingauthority,assigningandprioritizing activitiesandmonitoringoperatingstandards. The Executive Chef is to manager and control spending, waste, labor, inventory and finance of the culinary operation.
· ToensureHealthandSafetyandFoodSafetyStandardsaremaintainedinlinewithcompanypolicy.
· Toensurethatallemployeesareknowledgeableandmotivatedabouttheirrolesandthebusinessthrougheffectiveinduction,accurate job descriptionsandon the jobtraining.
· To develop the team by empowering them, supporting them, encouraging them and maintaining an ‘open door’policy.
· Tomaintainbudgetaryrecordsandensurethatallbudgetsareadheredto,unlessexceptionalcircumstancesarise.
· To ensure that all company procedures and work instructions are fully understood and practiced by allemployees.
· Toattendallhealthandsafetytrainingcoursesasrequired.
· Topromoteandencourageenvironmentimprovinginitiative,asappropriatewithinthebusiness.
· Track,record,andmaintaininventorystockincludingfoods,beverages,andkitchensupplies
· Delegatedailytaskstosouschefandotherkitchenstaff;managetheirprogressthroughouttheday
· Overseeentirekitchenstaff activityandensureefficient work
· Helpdeterminepricingformenuitems
· Hireandtrainnewkitchenstaff
· Workefficientlytoresolveanyproblemsthatarise inthe kitchen
Qualifications:
· Collegedegreepreferred;
· Minimum4 years’experienceasExecutiveSousChefor Chef
· Effectiveandclearcommunicator
· Expertskillsandexperienceplanning,designing,andpreparingmeals
· ProficiencyusingMicrosoftSuitetomonitorandtrackinventoryandmaintainreciperecords
· Excellenttimemanagementandorganizationalskills
· Provenleadershipandcreativeabilitiesinside thekitchen
· Expertproblemsolverwhothrivesunderpressure
· Topofthelinecustomerservicesskills
· TheExecutiveChefmusthavehighvolumerestaurantmanagementexperienceofatleast3years
· Passionformentoringanddevelopingothers
· Solidtrackrecordinachievingfinancialresults
· TheExecutiveChefmustbeextremelyguestorientedwiththehighestdegreeofhonestyandintegrity
